牡蛎壳源L-天冬氨酸螯合钙的结构表征及特性研究Structural Characterization and Physicochemical Property Analysis of L-aspartate Chelated Calcium from Oyster Shell

摘要(Abstract):
本文以牡蛎壳为钙源,制备L-天冬氨酸螯合钙,第一次较完整地探究其结构和理化特性。通过扫描电镜、红外光谱和质谱等技术表征螯合钙的结构,并对其物理化学特性进行研究。研究表明,螯合钙的微观形态整体呈团块状,结构较为紧密,表面有白色晶体吸附。红外光谱结果显示,L-天冬氨酸中的氨基和羧基主要以配位结合的形式参与了钙离子的螯合反应。一二级质谱结果证明,合成的螯合钙主要分子量响应峰值为342.9,其结构符合GB29226-2012中天门冬氨酸钙的结合方式。X射线衍射结果表明,所合成的L-天冬氨酸螯合钙为非晶态物质。相比于螯合反应前,螯合后的L-天冬氨酸螯合钙的热稳定性得到了一定程度的提高。在pH为5~8范围内的钙保留率均在90%以上,且具有良好的抗消化特性。本研究为牡蛎壳废弃物的高值化利用和开发牡蛎壳源的钙营养补充剂提供了理论基础和科学依据。
